Recipe Description

An unusual green tomato curry served garnished with sev.

Ingredients:-

  • Green tomatoes – 8 no medium
  • Oil – 2 tbsp
  • Cumin seeds – 1 tsp
  • Finely chopped ginger – 1 tbsp
  • Chillies, finely chopped –  2 green
  • Garlic cloves, finely chopped – 8-10 no
  • Red chilli powder – 1 tsp
  • Cumin powder – 1 tbsp
  • Coriander powder – 1 tbsp
  • Garam masala powder – 1/2 tsp
  • Dried mango powder (amchur) –  1 tsp
  • Salt –  to taste
  • Bhuna masala –  130 grams
  • Finely chopped fresh coriander leaves – 1 tbsp
  • Garlic sev – for garnishing

 

Method:-

  1. Roughly chop the tomatoes and grind into a purée .
  2. Heat oil in a non stick pan. Add cumin seeds and sauté till fragrant. Add ginger, green chillies, garlic and sauté till garlic becomes light golden.
  3. Add tomato purée and cook for 6-8 minutes.
  4. Add red chilli powder, cumin powder, coriander powder, garam masala powder, dried mango powder salt and sauté for 2-3 minutes
  5. Add bhuna masala and cook for 1-2 minutes. Add finely chopped coriander and mix well.
  6. Transfer into a serving bowl, garnish with garlic sev and serve hot.
