Recipe Description

Beaten eggs drizzled into a spicy and flavourful gravy .

Ingredients:-

  • Eggs – 4 no
  • Oil – 2 tbsp
  • Bay leaves – 2 no
  • Cinnamon stick – 1 two inch
  • Black cardamoms – 2 no
  • Black peppercorns 1 tsp
  • Ginger – 1 inch
  • Garlic cloves – 5 no
  • Red tomatoes – 3 medium
  • Coriander powder – 1 tbsp
  • Red chilli powder – 1/2 tsp
  • Turmeric powder –  a pinch
  • Garam masala powder – 1/2 tsp
  • Bhuna masala – 130 grams
  • Tamarind paste – 1 tsp
  • Finely chopped fresh green coriander – 2-3 tbsp

 

Method:-

  1. Heat oil in a non stick pan. Add bay leaves, cinnamon, black cardamoms, black peppercorns and saute till fragrant.
  2. Finely chop ginger, mash garlic cloves and add to the pan. Sauté for 2-3 minutes.
  3. Roughly chop the tomatoes and grind into a puree. Add to the pan and sauté for 3-4 minutes.
  4. Add coriander powder, red chilli powder, turmeric powder, garam masala powder and mix well.
  5. Add bhuna masala and sauté for half a minute.
  6. Add 3-4 cups of water, tamarind paste and mix. Allow the rassa to come to a boil.
  7. Break eggs in a bowl and whisk well. Add omlette strips to the rassa and cook for 1-2 minutes.
  8. Add fresh green coriander and mix. Transfer into a serving bowl and serve hot.
